Light theme: fix GTK entries, prompt and waybar contrast - #143

Latte accents are darkened to WCAG AA; upstream fails on a light background.
It was hardcoding mocha and loads at PRIORITY_USER, so it beat every app stylesheet.
Also poll for the old process instead of sleeping, which left waybar dead.
theme_apply.sh now sets gtk-application-prefer-dark-theme per theme.
theme_current.lua is read at startup only, so open editors never followed.

Adds catppuccin-latte and fixes the three things that still read as dark or fail
WCAG AA once the theme is light.
The wofi search entry was the stubborn one. It came from ~/.config/gtk-3.0/gtk.css,
which hardcoded
entry { background-color: #1e1e2e }and loads at PRIORITY_USER (800)against wofi's own stylesheet at PRIORITY_APPLICATION (600), so specificity could never
win. That file is now a stow package coloured from the generated names, which also
fixes file manager views, headerbars and sidebars.
theme_apply.sh now writes a powerlevel10k colour sidecar per variant. The rainbow
preset paints segment backgrounds from terminal colours 0-7 and writes black on top,
which only works when those colours are light; the light palette darkens them so they
work as text, which left the git segment at 1.19:1.
The relaunch now polls for the old process to actually be gone instead of sleeping a
fixed amount. Verified over five consecutive switches, waybar and swaync alive each
time.
