Adds U -> ytmusic in providerKeyForShortcut, a commandRegistry row, key_drift test updates, and a docs/keybindings.md entry. Verified: go build ./..., go vet ./ui/..., go test ./ui/model/ pass (./ipc failure is pre-existing/environmental — socket path length — and fails on clean main too).
