docs: expand the capability map (UCP re-read, five new protocols, shared standards) and simplify it - #14

UCP is re-read from its specification. Adds ERC-8004, Verifiable Intent, AGNTCY and Stripe SPT, folds MCP authorization and ID-JAG into MCP and adds a Shared standards row.
