Show ES|QL and classic mode alternatives where steps pick a data view #9192

Problem

{{kib}} now opens Discover in {{esql}} mode by default, so steps that tell readers to select a data view or use the KQL search bar don't match what they see. This covers pages outside the Discover section, such as Observability tutorials, Fleet and Kubernetes guides, deployment pages, and alerting pages.

Scope

Pages where the {{esql}} path is a simple equivalent:

• Give the {{esql}} query first, then the classic mode steps, and name each mode in its own sentence.
• Where a step only works with a data view, or the {{esql}} path needs more checking, keep a note that tells readers to switch to classic mode. Pages like these have their own issues under Show the ES|QL path wherever the docs describe Discover steps in data view mode #9190.

Classic mode content stays, because classic mode is the default in {{stack}} 9.0 to 9.5 and is available in every version.
