fix: use stdenv.hostPlatform.isDarwin instead of deprecated stdenv.isDarwin - #763

….isDarwin` nixpkgs deprecated the `stdenv.is*` aliases in NixOS/nixpkgs#518407, so on a current nixpkgs every evaluation of the grafana, tempo or pgadmin service prints `stdenv.isDarwin is deprecated, use stdenv.hostPlatform.isDarwin instead`. The value is the same, so no derivation changes.

The value is the same, so no derivation changes. CI doesn't show the warning becausetest/flake.lockpins a nixpkgs from before the deprecation.
