feat(mctl-support): revert pilot model to Nebius GLM-5.1 via AI Gateway - #2274

Verification step 4 of the AI Gateway spike (#2262): the Hetzner models answered every ticket and the ledger priced them at the fair prices, so the pilot goes back to its reference GLM-5.1 on Nebius through the gateway.
