Bump v3-operator:v5.1.1 and reconcile execution client pruning docs - #138

v5.1.0 is buggy, so pruning now requires v5.1.1. Use body and receipt barriers for Nethermind and Reth on both the current and legacy (v3) prerequisites pages, and describe Erigon's rolling prune window with a placeholder N instead of a fixed value.
